cardamom-coffeeYa’ll already know that I’m loving my cardamom coffee these days. I was looking for new ways to eat the ground seeds and … holy crap, reading that back sounds like I live alone with my six cats and they help me make creations while we wear matching aprons.

So my cats and I came up with a brilliant, quick energy snack recipe, if we do purr so ourselves – Cashew Cardamom Date Bites. These energy bites are packed with protein, nutrients and antioxidants.

cashew_cardamom_date_ballsSome would call these “Balls”, not “Bites”, but I really don’t want to have to type balls 13 times in one post. So they are bites. And now we’re over it.

Medjool dates are the best. They are super versatile, like in my Coconut Cream Larabars or Better Than Caramel Apple Dip. They are naturally (and insanely) sweet, which makes things taste like diabetes that are really, actually, perfectly healthy.

So check it.

These paleo protein balls (see, there’s that word again) are also delicious mid-day vegan snack bites. Every ingredient is natural, so they are a perfect clean eating recipe.

My Cashew Cardamom Date Bites recipe is an SEO dream. SEO is a nerdy blogger / web writer thing that stands for Search Engine Optimization, which basically means that when you google something … You know what? Nevermind.

Cashew Cardamom Date Bites

INGREDIENTS:
1 cup raw cashews
1 cup medjool dates, pitted
zest of one large orange
1/2 tsp ground cardamom
1/3 cup unsweetened coconut coconut flakes

DIRECTIONS:
1. Combine all ingredients BUT coconut in a food processor until all ingredients are well combined and starts to clump into a crust-like mixture.
2. Form into bite-sized balls.
3. Roll in coconut flakes until coated (Note: It may help to dab bites with water to get the coconut to stick!).
4. Shove three into your face hole, then store remainder in fridge in an air-tight container.
*If you are like me, and didn’t buy coconut because you have some in your fridge door from a year ago the last time you made a recipe with coconut, here is a sneaky tip to moisten dry coconut flakes.
PS. For the record, I have zero cats. I’m trying to uphold some street cred, here.
