Mmm That’s Good Broccoli Hummus

Last night I had a hankerin’ for a veggie explosion, so I decided to make a sandwich. Luckily I had stocked up over the weekend, so I had plenty of the good stuff on hand.

I was in an inventive mood, so I also decided to try my hand at making my own hummus for the first time. It turned out great. And I measure this by the fact that I had Husband try it and he said, and I QUOTE: “Mmmm. That’s good.” Usually, anything that is not drowned in Cholula or from the fast food establishment Chipotle gets an “Eh” response. So I equate “good” to mean “award-winning”!!

Here is the low down on the sammy:

2 pieces of lightly toasted whole wheat bread spread with

1 tbsp-ish of Mmmm That’s Good Broccoli Hummus on each slice

Top bread with: sliced red, green and yellow peppers, sliced cucumbers, carrots and alfalfa sprouts.  I would have added tomatoes, but we were all out.  Sad face.

Close sandwich. Chop up some veggies for dippin’.

Fill belly.

As for the hummus recipe, I was adapting this recipe from Choosing Raw, so I don’t know exact measurements of ingredients. But I did my best to recreate it.  In short, here is your opportunity to make this recipe your own!
