One of my favorite smells of all time is food grilling. When I tell people this, the usual response is a confused look followed by a version of “Sooo, what you are telling me is the vegetarian likes the smell of cooking meat?” Yes. Yes I do. It reminds me of summers as a kid, running around my neighborhood until I heard Em Em Dub’s distinct whistle that it was time for dinner. Dinner was burgers, hot dogs, pork chops, corn on the cob, chicken breast. Not all at once, obviously. That would be ridiculous.
When my friends at Red Gold Tomatoes told me about their Summer Grillin’ Party, I was super excited to play along. The party is on Red Gold’s Facebook page, where they are posting new recipe videos and grilling tips each week from July 24-August 30. I have purchased Red Gold Tomatoes a hundred times before, but never realized they are a family-owned business that focuses on growing local in the Midwest. They say the true seasons here positively impact the flavor of tomatoes. The Midwest, while it’s cold in the winter, has the perfect growing season for tomatoes, the perfect angle of the sun, perfect temps — even the winter is good for tomatoes, as it breaks up the soil for tiny root systems.
Tomatoes are a great source of Vitamins A and C, which have anti-aging properties. It also contains lycopene (what gives the fruit its red color), which is said to help prevent cancers. Tomatoes are packed with important heart disease fighting nutrients like as niacin, folate and vitamin B6. The list goes on!
To get me pumped for the party, Red Gold sent me some of their products and a few recipe cards for yummy meals on the grill. While I won’t be trying their Caribbean Chicken Burger or Italian Turkey Burger anytime soon, I did put my own twist on the Summer Tomato Burger. It sounded…like summer. I mean, we’ve all put tomatoes ON our burgers, but what about IN them? So genius and so easy.
Summer Tomato Pinto Bean Burger
1 (15 ounce) can pinto beans, rinsed and drained
1/2 c. shredded Colby Jack cheese
1/4 c. Panko bread crumbs
1/2 t. ground cumin
1/2 t. garlic salt
1/4 t. ground black pepper
1 t. parsley flakes
1 large egg white
1/4 c. mayonnaise
1/4 c. Mama Selita Jalapeno Ketchup (or any ketchup)
1 T. mustard
4 whole wheat hamburger buns
4 lettuce leaves
1. In a medium bowl, mash pinto beans with a fork. Add cheese, bread crumbs, cumin, garlic salt, pepper and parsley. Add egg white and stir until well combined. Shape bean mixture into 4 (1/2-inch-thick) patties.
2. Place patties on grill over medium-high heat. Cook 3 minutes on each side or until patties are browned and thoroughly heated. (Can also cook on stove. Heat oil in a large nonstick skillet over medium-high heat. Add patties to pan and cook until brown on both sides)
3. In a small bowl, combine mayo, ketchup and mustard. Place patties on bun topped with lettuce leaves and mayo sauce.
Wow, were these flavorful! The hint of cumin and chili mixed with the beans and tomatoes. Mmmm. The tomatoes tasted so fresh, they were the perfect addition to my traditional bean burger. I can definitely see myself making pasta sauce or Big Sis’s lasagna. Or throwing them in a quinoa salad.
Meat eaters, feel free to follow this recipe without the bread crumbs and egg whites (and beans, of course).
