Fiterature by iPhone + Coconut Cream Larabars

The past few weeks have been a little hectic as I try and find a rhythm with my new job. I have had a pretty regular flow to my day for the last two years – run at 6, work at 8, gym at 12:30, home by 5:30, dinner by 6:30.  Repeat. I could pretty much have the same schedule with my new job but something about the new drive, new coworkers, new responsibilities and new gym (yes, I have a gym at the office!!) has me feeling “off”. - Congratulations on your new job that you probably won't like any better

{So not true. I heart my new job.}

As much as this out-of-sorts feeling is annoying, I’m embracing it at the same time.  There are only a few instances in life where you truly get to experience life-altering newness– a love interest, a marriage, a baby, a friend, a city, a pair of shoes (No? Just me?!), a job. Before I know it my day will be business as usual and back to the ho-hum.  So for now, I’m soaking it all in for what it is.

In lieu of said wonkiness, this week’s musings have been captured via iPhone instead of a fancy photo shoot at Fiterature Studios.  Sorry I’m not sorry.

Alas, Fiterature by iPhone Volume I.

What most people see as an almost empty peanut butter jar on a Monday night, I see as an opportunity for greatness.


Yes, that’s ice cream.  I call it the Walking Sundae.  And this just might be my One Shining Moment.


Speaking of One Shining Moment – Harvard, Ole Miss and Wichita State….WHAT ARE YOU DOING TO MY BRACKET!?? Ugh.

It’s okay though, I promise.  I have these to eat my feelings with.

Coconut Cream Larabars

Coconut Cream Larabars.  They are moist (I said moist), rich in salty sweet flavor and filled with protein.  I love me some healthy energy bars. (Recipe below)

And then I woke up this morning to a surprise visitor!

Fresh Snow Prince

#FreshSnowPrince of Bel Air was on our front steps!  He even has a killer fade happening in the back. Bust it.

In west Philadelphia, born and raised. On a playground is where I spent most of my days.

Chillin’ out maxin’ and relaxin’ all cool while shootin’ some bball outside of the school.

Coconut Cream Larabars – adapted from My Whole Food Life


15 medjool dates pitted (found mine at Trader Joe’s)
1/2 cup unsalted almonds
1/2 cup salted cashews
3/4 cup shredded unsweetened coconut
2 T coconut oil (in liquid, not solid form)
2 T water


Mix the almonds, coconut and cashews in a food processor until fine. Then add the dates, oil and water and pulse until a wet dough forms. Line an 8X8 pan with parchment paper, leaving the paper draped over the sides. This way, the bars will be easy to remove and cut with a pizza cutter. Press down the dough into the pan with the back of a spoon so that it is packed well. Place in the fridge to set for an hour or two. Remove paper and bars from the pan, slice into squares or bars and eat. Store in an airtight container in the fridge for up to two weeks.

**If you cannot find medjool dates, you can use regular dates but they are smaller.  Adjust the recipe to 20 dates.
