Vegan Queso Dip recipe

The first thing I think of when I hear Super Bowl Party is cheese dip. So when I made the decision to cut dairy out of my diet about two months ago, it meant I had to find an alternative to el queso for the big game.

You guys have heard me talk about using nutritional yeast as a substitute for parmesan cheese on popcorn and in my Vegan Chicken and Eggplant Parmesan. But can it really stand on its own as a dip?vegan_queso

Uh huh.

But first, my dear readers, let me do some essplaining, because most people know zero things of information about nutritional yeast.

Nutritional yeast is deactivated yeast that is grown and extracted from the molasses plant. The reason nutritional yeast can be added to recipes without being cooked is because it IS deactivated. You should never add activated yeast (like the yeast used to bake breads) to a recipe without cooking it first – otherwise, it can continue to grow in the GI tract and can cause digestive troubles, which is no. bueno.bragg-nutritional-yeastNutritional yeast is full of vitamins, minerals and 18 amino acids, which makes it a complete protein! What whaaaaaat?! Nutritional yeast is rich in B-vitamins, which is uber important for vegetarians like me, because B-vitamins are typically found in animal products. It is also high in fiber and protein!

Nutritional yeast adds a cheesy flavor to dishes – and I use it just like I would parmesan cheese. I sprinkle it over pastas, salads, eggs, popcorn, fries and roasted vegetables. I also mix it into sauces and gravies, or add it to panko breadcrumbs for breaded chick’n and healthy “fried” vegetables.

Mkay, got it? Now. On to the vegan queso dip recipe with nutritional yeast.



Serves 6. Or 1, if you are me.

1 cup unsweetened almond milk
1/4 cup nutritional yeast
1 cup cashews
2 tsp kosher salt
2 tsp garlic powder
2 tsp onion powder
1 tsp crushed red pepper
1/4 10-ounce can of diced tomatoes, drained

1. Add all ingredients EXCEPT THE TOMATOES into a blender or food processor.
2. Press the blend button. Start on low.
3. Scrape the sides. Get after it a little more.
4. Scrape the sides. Blend on high until smooth.
5. Put it in a bowl. Gently stir in tomatoes.
6. Warm in the microwave or on the stove on medium, or serve room temp.
7. Dip a chip in that bad boy.
8. Eat the chip.
9. Smile because awesome.
